S’mores Pizza

Ingredients
  • 1 Pillsbury refrigerated pie crust
  • 7 tbsp butter, melted, divided
  • 1 1/4 cup graham cracker crumbs
  • 6 oz semi sweet chocolate chips (about 3/4 cup cup)
  • 1/3 cup heavy whipping cream
  • three 1.55 oz Hershey's chocolate bars
  • 2-3 full graham cracker rectangles, broken into pieces
  • 2 cups mini marshmallows
  • chocolate sauce, for drizzling, optional (the one I used)

Asian Noodles with Snow Peas and Mushrooms

Ingredients
  • 2 tablespoons sesame oil
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds
  • 8 ounces button mushrooms, sliced
  • ¼ cup soy sauce
  • ¼ cup honey
  • ¼ cup chicken stock
  • 1 tablespoon cornstarch
  • 1 teaspoon Sriracha sauce (or any hot sauce you have)
  • 40 snow peas, ends trimmed and cut in half
  • ½ lb. fettuccine pasta

Gingerbread S’mores Cookie Pizza

Gingerbread S’mores Cookie Pizza

Ingredients
  • 2 cups flour
  • 1 Tablespoon cinnamon
  • 2 teaspoons ground ginger
  • ¾ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • ¼ teaspoon of salt
  • ½ cup butter, softened
  • ¾ cup brown sugar
  • ¼ cup molasses
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ to ¾ cup semi-sweet chocolate chips (I used the Nestlé holiday variety)
  • ½ cup of graham crackers, crushed
  • 1 to 1½ cups of marshmallows (I used 10 jumbo sized ones and the rest I used mini ones. Use whichever kind you prefer or have on hand)

  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar (or 2 tablespoons each balsamic and red wine vinegar)
  • 1/4 teaspoon ground black pepper (or more, to taste)
  • 1/4 teaspoon salt (or more, to taste)
  • 1/2 teaspoon white sugar
  • 1 tablespoon Greek yogurt (optional)
Salad Ingredients:
  • 2 large cucumbers, sliced thinly
  • 3 avocados, peeled, cored, and cubed
  • 1 package tortellini (7 oz)
  • 1 cup feta cheese

Thai Peanut Chicken Tacos with Pineapple Lime Cucumber Slaw 

Ingredients:
Thai Peanut Chicken
  • 2 pounds chicken (4-6 chicken breasts) chopped into bite size pieces
  • 1/3 cup soy sauce
  • 1/3 cup brown sugar
  • 2 tablespoon lime juice
  • 2 tablespoons fish sauce
  • 2 teaspoons freshly grated ginger (1/2 ground ginger)
  • 4 garlic cloves, minced
  • 2-3 teaspoons sriracha (2 only if you can’t handle any heat)
  • 1 tablespoon dry basil
  • ½ teaspoon black pepper
  • 1 1/2 teaspoons cornstarch
  • ½ cup crunchy peanut butter
Pineapple Lime Cucumber Slaw
  • 3 tablespoon fresh pineapple juice
  • 1 tablespoons rice vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • Pinch of salt and pepper
  • 3 cups (prepackaged) cucumber slaw OR broccoli slaw with matchstick carrots and cabbage*
  • 1/3 cup green onions, chopped
  • 2 cups pineapple, chopped
  • 1 red chili pepper, seeded and diced
  • 8-10 flour tortillas
  • ¼ cup crushed peanuts
