Thai Peanut Chicken Tacos with Pineapple Lime Cucumber Slaw 

Ingredients:
Thai Peanut Chicken
  • 2 pounds chicken (4-6 chicken breasts) chopped into bite size pieces
  • 1/3 cup soy sauce
  • 1/3 cup brown sugar
  • 2 tablespoon lime juice
  • 2 tablespoons fish sauce
  • 2 teaspoons freshly grated ginger (1/2 ground ginger)
  • 4 garlic cloves, minced
  • 2-3 teaspoons sriracha (2 only if you can’t handle any heat)
  • 1 tablespoon dry basil
  • ½ teaspoon black pepper
  • 1 1/2 teaspoons cornstarch
  • ½ cup crunchy peanut butter
Pineapple Lime Cucumber Slaw
  • 3 tablespoon fresh pineapple juice
  • 1 tablespoons rice vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • Pinch of salt and pepper
  • 3 cups (prepackaged) cucumber slaw OR broccoli slaw with matchstick carrots and cabbage*
  • 1/3 cup green onions, chopped
  • 2 cups pineapple, chopped
  • 1 red chili pepper, seeded and diced
  • 8-10 flour tortillas
  • ¼ cup crushed peanuts
