Walnut-Crusted Pork Tenderloin with Apple Cider Gravy 

Ingredients:
For the Pork:
  • 2 (8 oz each) pork tenderloins
  • Salt and pepper, to taste
  • 2 cups walnuts
  • ¼ cup fresh sage
  • ¼ cup fresh thyme
  • 1 clove garlic
  • 1 cup flour
  • 2 tablespoon olive oil, divided
  • 2 tablespoons butter, cubed
For the Apple Cider:
  • 1 small onion, coarsely chopped
  • ½ tablespoon flour
  • 2 cups apple cider
  • 1 cup low-sodium chicken broth
  • 1 dry bay leaf
  • Salt and pepper, to taste
  • 1 teaspoon apple cider vinegar
