lb. ground Italian sausage (I strongly recommend using "spicy"
Italian sausage)

large handfuls roughly-chopped kale leaves, stems removed
- 2 cups
shredded mozzarella cheese (I used 2% low fat)
- optional
additional toppings: shredded Parmesan cheese, crushed red pepper flakes
